Amaranth was a staple grain of the Aztec people in Mexico. It also played a large role in Aztec festivals and ceremonies, and was thus outlawed by the Spanish colonizers. The importance of this plant was not forgotten, and lucky for us, many Aztec people rebelled by continuing to grow and save the seed.
This festive, warm orange amaranth grows to 6' tall with glorious heads that measure over a foot tall and wide! Young leaves have distinct yellow ribs and are a nice addition to salads, and white seeds are also edible. The small, nutritious seeds can be threshed by hand and, unlike many other grains, don't need to be hulled to eat! Spectacular cut flower, excellent for fall arrangements. Open-pollinated.
