Phaseolus vulgaris

The Jacob's Cattle Dry bean, otherwise known as the Trout or Appaloosa Bean, originated in the Northeastern United States and Southeastern Canada cultivated by the Passamaquoddy tribe.

This heirloom bean is packed full of flavor and holds its shape during cooking. They are a bush style bean with slender and long pods that shatter when dried. They will dry earlier on the vine than the Calypso bean.

Harvesting tips from Winniford Family Farm;

"Allow to dry on the vine if conditions permit, but in a rainy season they can picked into well ventilated containers and allowed to finish drying inside.  You know they’re ready for threshing when they easily shatter under finger pressure.  Our low-tech threshing technique is to put the dried pods in either a large Rubbermaid-type container or a kiddy pool.  Stomp them (with your shoes on) and the beans will release from the pods.  Remove the empty shells and the beans fall to the bottom."
