Valerianella locusta
This nutty little number is one of the most delicious and underrated salad greens. It's quite cold-hardy but bolts in hot weather. Use alone or in combination with other greens for fall, winter, and spring salads. Can self-sow if you let it! Rapunzel is the German name for it, so let your hair down and feast! Open-pollinated.
