Description
Pastinaca sativa
Delectable root veggie and a winter gardener’s must-grow crop!
While parsnips can be grown in spring or fall, they’re most delectable in winter and early spring dishes. Hardy roots can overwinter in the soil in many places, and get sweeter with frost, reaching their sweetest flavor peak in Feb-March when the garden is at its least inspiring. Be patient—seeds can take a few weeks to germinate!
Seeds grown by Quel Ranch Farm in Garden City, Idaho.
