Chinese farmers call Rhubarb "the great yellow" (dà huáng 大黃) and have used rhubarb root for medicinal purposes historically. Known for its edible stalks, Rhubarb appears in The Divine Farmer's Materia Medica, which is thought to have been compiled about 1,800 years ago. Produces large bundles of enormous leaves, up to 60 cm (2 feet) across. Leaves appear in early Spring followed by stalks in the Summer. Roots stand up to cold very well while the flowers will die back in Autumn.
