Calypso beans originated in the Americas, more specifically in the Caribbean where they began growing them over 400 years ago. They are a cultivated hybrid of the kidney bean.

The Calypso bean, also known as the orca bean, is an heirloom variety known for its creamy flavor. Winniford Family Farm loves to enjoy them in soups! This beans takes longer to dry than Jacob’s Cattle, but is known to produce higher yields.

Harvesting tips from Winniford Family Farm;

"Allow to dry on the vine if conditions permit, but in a rainy season they can picked into well ventilated containers and allowed to finish drying inside.  You know they’re ready for threshing when they easily shatter under finger pressure.  Our low-tech threshing technique is to put the dried pods in either a large Rubbermaid-type container or a kiddy pool. Stomp them (with your shoes on) and the beans will release from the pods.  Remove the empty shells and the beans fall to the bottom."
