A productive, heirloom, spring-sown & awned soft white wheat known to produce a hearty bushel and great flavor. Chiddam Blanc de Mars (often referred to as Chidham) is a soft white wheat destined for the best baking you can imagine. English heirloom that gained popularity to make baguettes in 1800s France. Average 7-8 rows per head, 4 seeds per spikelet. Very easy to thresh.
Heritage grains, including heirloom wheats, are in the midst of a renaissance as small-scale farmers, bakers, and eaters rediscover their unique flavors and hardiness in the field. They are often better tolerated by folks with gluten allergies than modern varieties. They are also more genetically diverse and therefore more adaptable to a diversity of growing regions.
Fun fact: wheat has a genome five times the size of the human genome! Hooray for heritage wheat!
